Valentines Day MUFFINS!!!

You can make these and add a note to your husband or son,  "TO MY FAVORITE STUD MUFFIN!" Blueberry Cream Muffins

Prep Time: 10 Minutes Cook Time: 20 Minutes Ready In: 30 Minutes Servings: 24

"Rich and delicious blueberry muffins. The secret is the sour cream."

INGREDIENTS:

4 eggs 2 cups white sugar 1 cup vegetable oil 1 teaspoon vanilla extract 4 cups all-purpose flour

1 teaspoon salt 1 teaspoon baking soda 2 cups sour cream 2 or 3 cups blueberries

DIRECTIONS:

1.	Preheat oven to 400 Grease 24 muffin cups or line with paper muffin liners.
2.	In large bowl beat eggs, gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and baking soda.
3.	Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
4.	Bake in preheated oven for 20 minutes.

Added Notes after making them:

If using frozen, just throw them right in, no need to thaw. I Added about an extra 1/2 cup of sugar & 1 1/2 teaspoon cinnamon to the flour mixture.

Just mix the sour cream right in with the egg mixture until smooth, then slowly add it to the flour. As an alternative, using 50/50 of white sugar and light brown sugar gives it more flavor. And to top it off, streusel on top for sweetness b4 baking.

DON'T OVERMIX. Just like pancake batter, mix just until flour has been absorbed. Batter will be very thick and slightly lumpy. I use regular (medium) sized muffin tins and fill the paper cups right to the top for bakery size muffins.

To Make Crumb Topping: Mix together 1/2 cup brown sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.

Getting to Know.....STEFFANI CLARK

My name is Steffani Sellers Clark.

I grew up in Bountiful. 

I was born in Portland Oregon.

I am the youngest of 4.  I have a brother who lives in Texas, and 2 sisters who live in Bountiful and Salt Lake.

I met my husband on my first day of school at BYU-Idaho.

I have 5 kids.  My twins, Camryn & Brooklyn, are 8 1/2.  Kendyl is 6.  Nixon is 3 1/2.  Calvin is 1.

We love the outdoors.  We go boating a lot in the summer and we can't wait to really break in our new backyard :)

Most of my time is spent keeping my house put together as I chase 5 busy kids around.  Ballet, music lessons, soccer, school, and all that other good stuff.... we wouldn't want to be bored ;)

I have lots of favorite foods, but my FAVORITE foody website is jamiecooksitup.net.  Everything on there is to die for.  I promise.

My least favorite food is FISH!

I wouldn't say I'm REALLY good at much of anything, but I'm good enough at most things I try.  I really enjoy dancing, baking, playing soccer, wakeboarding/surfing, cleaning, going on dates with my husband, and playing with  my kids.

My favorite book is.....oh man, I can't remember the last time I read a book besides the Book of Mormon.  I started the Elizabeth Smart book "My Story" last year, it was really good....I should find some time to finish that!

I really don't have a favorite movie, there are so many great ones!  I always loved Father of the Bride though :)

My favorite memory is the day my twins were born.  Such a relief to not be pregnant anymore, and so excited to have 2, brand new baby girls.  I always dreamed of having twin girls, so to actually GET them right off the bat was nothing short of a miracle!

My favorite scripture is 1Corinthians 10:13

13 There hath no temptation taken you but such as is common to man: but God is faithful, who will not suffer you to be tempted above that ye are able; but will with the temptation also make a way to escape, that ye may be able to bear it.

When I grow up, I want to be a WORLD TRAVELER (on a cruise ship), and the most fun Grandma ever :)

My favorite place to shop is TARGET!!

If I could have someone do one of my chores it would be.... mopping....no wait, dusting the blinds!  Either of those :)

If I could have one wish, it would be for the temperature to stay at 80 degrees ALL YEAR!!  Oh, and have a beach across the street :)

I want to Re-learn to play the guitar.  Lost skill.

Something not many people know about me is- I went skydiving a few years back and had SUCH a great time.....that I think we should do it for a Relief Society Activity ;)

One time I got caught....nope, haven't been caught yet!!

If I could have lunch with anyone, alive or dead, it would be... George Washington.  I just want to see the look on his face when we pull up to Cheesecake Factory.
