Lemon Roasted Potatoes

Ingredients:
2 lbs (6 cups) potatoes, washed & quartered
1 medium Lemon halved/sliced
1 TBSP Olive Oil
2 tsp. rosemary (Can use fresh or dry)
½ tsp. salt
¼ tsp. pepper


Directions:
In a large bowl add cut up potatoes, toss with olive oil, then add dry ingredients, then add lemon. Pour onto greased cookie sheet, Bake 425 for 35-40 minutes.
